Naturally Smart: Sustainable Food using Artificial Intelligence (AI4NaturalFood)

Eating plant food instead of animal food helps the environment and our health. But to make the plant based foods we love, such as meat replacers, plant based dairy, margarine and mayonnaise, we need to strongly refine the plant ingredients. This costs a lot of water and energy, and creates a lot of waste. But the original structure of plants already looks quite like the foods we make out of these processed ingredients, so why don’t we just lightly process them to use that directly in our foods? That is possible, and this saves a lot of energy and water, but it is much more difficult to make the same great foods out of them. This project will combine the power of artificial intelligence with the newest, light food processing methods, to make the best use of the natural properties of plants. This will bring major savings in water, energy and land use, while our foods may also become better suited for a healthy diet by having more fibre and micronutrients.
